Q. I have several vegan friends. How can my fiancé and I best accommodate them at our dinner and reception?
A. Ben Hunter of Madison’s Underground Food Collective, a catering service that focuses on local and organic foods, suggests finding a caterer willing to craft a vegan-centric menu that also entices the meat-and-potatoes crowd. Try grilled vegetables like eggplant and zucchini, polenta and field greens with vinaigrette, and offer meat as a complement to the meal.
“You have a full vegan meal except for the steak or chicken, which is the add-on,” says Hunter.
Another option is to seat vegan invitees together and serve them a separate meal. It’s important to remember, says Hunter, that veganism is a “conscious choice,” and they tend to prefer foods that are organic and ethically produced. “Anyone could make a ‘vegan’ meal, but how it’s prepared and the ingredients used might not satisfy the reason for being vegan,” says Hunter. “To best serve your vegan guests, it’s important to go with a caterer who understands that connection.”
